Keeping a starter alive

Feed it equal weights of flour and water once a day if it lives on the counter, or once a week if it lives in the fridge. Discard all but a spoonful before each feeding.

A healthy starter doubles within six to eight hours of feeding and smells pleasantly sour. A layer of grey liquid on top simply means it is hungry; pour it off and feed it.
